Thanksgiving Week: The Turkey

I admitted a few days ago that we have never roasted a turkey. And it’s not because we don’t have the equipment. We have a beautiful Calphalon roasting pan and an electric knife just sitting on the shelf in our garage, patiently waiting to make their debut. Perhaps for Thanksgiving 2012?

If we were hosting this year, here are two turkeys that I would turn to for inspiration:

  • From Alton Brown: Brine with brown sugar and candied ginger and roast with apples, cinnamon, rosemary, and sage.
  • From Michael Symon: Stuffed with garlic and apples and covered in a cheese cloth soaked in cider butter. Served with lager gravy.

  1. I’ve never roasted a turkey either! Wasn’t going to this year and then I saw the turkey at the grocery store and couldn’t say no! Now I’m making it over the weekend- thanks for the links!
