Weekend Menu Planning

Lately, Nick and I have gotten into the habit of dining out on weekends. While we’ve enjoyed discovering hidden gems, and we’re always in the mood for wings and beers from Otto’s, we really do miss cooking together (a la the culinary couple).

The excuse, “we’re too busy to go grocery shopping,” is no longer valid. Starting now. Plus it would be smart for us to save money and eat healthier. Our wedding is in just 27 days, after all!

Here’s what I have planned for the weekend:

Friday Dinner
Hawaiian Paninis with Ham, Pineapple, and Mozzarella
Strawberry Salsa (recipe from fresh365)

Saturday Breakfast
Chocolate Chip Pancakes (a weekend staple for us)

Saturday Lunch
Grilled Chicken Salad with Honey Mustard Dressing (recipe from All Recipes)
Local Plums

Saturday Dinner
Blackened Mahi Mahi (caught during Nick’s bachelor party)
Broccoli Slaw (recipe from Smitten Kitchen)
Yogurt with Granola and Local Peaches

Sunday Breakfast
Eggs and Toast (with Wegman’s honey apple oat bread, of course)

Sunday Lunch
Leftovers

I also want to make these yummy looking blueberry crumb bars with blueberries I picked up at the farmers market this afternoon. (recipe from Smitten Kitchen)

  1. Cinnamon Chipotle BBQ Ribs with Broccoli Salad (fresh organic broc, sweet vidalia onion salad dressing, bacon bits, red onion, and almond slivers)

    Crabcakes (using Panko breadcrumbs, a fave) served with spring mix and a citrus vinaigrette

    Spicy Citrus Shrimp with Mango Habanero Relish on basmati rice.

    Key Lime Cake with lots of whip cream and lime:)

  4. Oh Emily, you always make me smile… Your blueberry crump bars are a very typical and original German recipe. That is the kind of cake we eat all the time with different fruits depeding on the season. Enjoy! I am on my way to the local farmers market right now and will see what they got there and decide then what I will fix for dinner… Have a wonderful weekend!!!
